The Product · Chilgoza

The pine nut the
mountains ration out slowly.

Chilgoza grows only in the wild pine forests strung along the Himalaya and Hindu Kush. There are no plantations — each cone is gathered by hand from steep, remote stands, then sun-cured and shelled in the valleys below. The kernel is long, ivory and faintly resinous; sweeter and softer than the Mediterranean pine nut, and a fraction as common.

We offer it two ways — in-shell for the table and the traditional trade, and as clean, sorted kernels for confectioners, bakers and fine-food houses.

    Cones are sun-cured until they open and release the seed, then given a first hand-sort in the valleys below the tree line.

    Sorting & Grading

    Kernels and in-shell lots are cleaned, sized and graded to specification, with samples drawn for moisture and quality control.
